Chocolate, red plum jam, balsamic notes and spices. A championship cup.
In the mountains of Huila, one of Colombia's most renowned coffee regions, we find Finca La Perdiz, in the Riverita district. At 1,800 metres above sea level, Hugo Armando Yossa tends his coffee plants with the aim of bringing out the full potential of his varieties. And we came to this coffee with an added motivation: we already knew the name La Perdiz from the cupping table, long before it reached our bar.
Huila is a land with a long coffee tradition, where altitude and growing conditions favour coffees with sweet, aromatic profiles and a marked fruity expression. This Pink Bourbon lot has been washed, a method that delivers a clean, well-defined cup and lets the genetics, the terroir and the producer's work come through clearly.
In the cup we find a base of chocolate, over which appears a ripe, indulgent fruit that inevitably reminds us of red plum jam. Not a light, fresh fruit, but a cooked, dense and sweet one that adds depth and makes the cup especially enveloping.
As the coffee evolves, very present balsamic notes appear, intertwining with the spices and adding a different aromatic dimension. And on the finish we find liqueur-like hints which, together with the chocolate, create a deep, warm and lingering sensation. Its syrupy acidity and creamy body complete a beautifully balanced cup, where the sweetness stays with you from start to finish.
Although its roast is designed for filter, its profile proves far more versatile. As espresso it brings out its chocolatey, liqueur-like and creamy side especially well; in a moka pot, drip coffee maker or Switch, the fruit and balsamic notes gain definition. And there is one preparation our shop customers have already made one of their favourites: Cold Brew. Served cold, the sweetness of the ripe fruit and the balsamic notes take on a particularly refreshing expression, while the chocolate remains the common thread.
La Perdiz also has a special meaning for NOKORA. This coffee took fifth place in Taza Platino, a competition we know particularly well: in 2023 we had the honour of taking part as judges in that edition, sharing the cupping table and experiencing first-hand the work and dedication behind the coffees that make it that far. Finding a La Perdiz coffee in our catalogue now makes this addition even more special for us.
And perhaps it is precisely that blend of history, quality and enjoyment that best defines this coffee: a Colombian that rewards close attention, revealing how it evolves with every sip, but that also simply invites you to brew a cup and enjoy it.
